Job Title: Culinary Extern

Job Pay Rate: $18.56/hr

Job Summary:

As a member of the culinary team, the position of Culinary Extern is an entry level culinarian position for individuals currently enrolled in a collegiate culinary program. The position of Culinary Extern has the responsibility to perform all methods of cookery, portion control, garnishing of dishes and follow recipes in accordance with standards set forth by The Broadmoor. Individual will be expected to follow direction of the Executive Chef, Chef de Cuisine and Sous Chefs in maintaining the highest standards of food quality, taste, and production. Prepare all hot and cold food in assigned areas. Will assist the chef as necessary. Students will gain experience in the Culinary Department at a 5-Star and 5-Diamond level.

NOTE: This is a paid externship and must be recognized by extern’s collegiate institution as academic credit towards his/her chosen culinary degree. This is an externship which entails a minimum of 32-40 hours per week for a minimum of 16 weeks. Housing is on a first come, first-serve basis and is not guaranteed.  

Essential Duties and Responsibilities include the following while other duties may be assigned:

  • Trains to prepare hot and cold food as specified in areas working in
  • Trains to prepare food for breakfast / lunch / dinner as assigned
  • Trains to maintain a clean, organized and sanitary work area following safety guidelines
  • Trains to assist chef with maintaining the kitchen and keeping staff on task
  • Trains in preparation of all menu items in assigned area daily to include hot and cold food as specified in areas.
  • Trains to be able to understand and adjust recipes according to business levels
  • Trains to understand organization of product, equipment, and necessary paperwork.
  • Trains to precisely follows portion control, presentation of food, consistency of food, and flavor as determined by the culinary department.
  • Trains to check coolers for proper rotation of food items to prevent spoilage.
  • Must be able to maintain Serv Safe and health department standards.
  • Trains to check and complete mise en place and pars to set-up the station.
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast-paced environment.
  • Ability to work cohesively as part of a team.
  • Ability to focus attention on guest needs, always remaining calm and courteous.
  • Uphold and abide by all Broadmoor policies, procedures, and safety guidelines.
  • Takes required breaks, notifying supervisor prior to leaving station.
  • Other duties as assigned.

  • Must be 18 years old.
  • The employee is occasionally required to lift/pull/push up to 50 pounds and will be working in conditions that are both inside and outside at times.
  • Enthusiastic, friendly, and energetic team member who works well with others.
  • Strong interpersonal communication skills
